This Coconut Banana Green Smoothie brings the taste of the tropics right to your blender, all without adding any extra calories or fats. Like most of our smoothie recipes, this recipe uses three amazing superfoods–quinoa, banana, and spinach–to boost your health while still tasting fantastic. If you’ve never tried blending quinoa into your morning smoothie, then you have to give this a try. You won’t believe how much incredible earthy flavor it brings (not to mention all that plant-based protein, too!).

Ingredients

  • 1/2 cup cooked (chilled) quinoa (follow cooking directions on package)
  • 1 medium frozen banana, pre-sliced
  • 1/4 cup no-sugar added apple juice
  • 1 tablespoon unsweetened shredded coconut
  • 1 cup milk (soy, nut, or dairy can be used)
  • 1 cup baby spinach, packed
  • 1 tablespoon fresh ginger, minced
